A long time ago, at what is now my favorite izakaya, I tried to order a miso butter cheese yaki-onigiri. The server said, “Sorry, the menu says miso, butter, OR cheese,” which of course it did, but my heart shattered. Which must have showed on my face because he got lightbulb eyes, asked me to hold on, and then ducked behind the counter to get special permission. That man was doing the Lord’s work. I am grateful to him to this day.
